When it comes to salad the first thing that comes to my mind would be Romaine Lettuce, Butterhead or anything else that’s green. Never thought of using Broccoli in salad. I came across this recipe at JamieOliver.com while looking for something else.
In this recipe he used Bacon bits and White Wine, I replaced bacon with roasted chicken breasts and I hand peeled instead of slicing it to strips giving it more appeal. I just didn’t use anything to replace the White Wine. No doubt, without bacon the taste of the salad is different but it’s still good to eat.
Here’s the recipe for your pleasure.
- 2 large heads of broccoli
- 8 rashers of smoked streaky bacon, the best quality you can afford, finely sliced
- olive oil
- 3 firm red tomatoes, halved, deseeded and finely sliced
- a small bunch of fresh chives (with flowers if you can get them), finely chopped, flowers reserved
For the dressing:
- ½ a clove of garlic, peeled and finely grated
- 2 teaspoons Dijon mustard
- 6 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- sea salt and freshly ground black pepper
